White bean dip with garlic, lemon, and basil

One of her favorites is a white bean dip with garlic, lemon, and basil. This is perfect for the upcoming holidays when temptations run fast and furious. This dip will surely satisfy your cravings for a great holiday dip. Served with raw vegetables you'll be celebrating just like everyone else and burning fat!

White Bean Dip, Lemon and Basil

gillespie.jpg (3699 bytes)This is a great dip to keep on hand for snacks. It seems I never make enough- Dr. Gillespie

What you need:

  • 4 cups white beans, soaked and cooked if dried, or straight from the can reserve any liquid)
  • 1/3 cup coarsely chopped fresh basil or parsley leaves
  • 1/4 cup lemon juice
  • 1 tablespoon extra-virgin olive oil
  • 2 large garlic cloves crushed

What you do:

  1. Drain beans.
  2. Combine beans, basil, lemon juice. oil, and garlic in the bowl of a food processor.
  3. Process until smooth, adding reserved liquid tablespoon by tablespoon as necessary.
  4. Add salt and pepper to taste. refrigerate at least 1 hour.

Serve with crisp vegetables like peppers, celery, broccoli, daikon
